Pentillie Berry Cordial Recipe

As the summer berries soak up the sun,
ripening with every ray
we all have red fingers and thumbs …
Pentillie’s fruit pickers have been busy today

Chef wanted to share her recipe for ‘Summer in a Glass’

So, here is the recipe. We hope you enjoy it.

You will need ; –
1kg hulled and cleaned berries and currants (strawberries, raspberries, black currants and red currants)
1.5lt Water
750g Caster Sugar
Fine Sieve
A large bowl
Blender / Handheld stick blender / Nutribullet (which ever you have)


Put the water and the caster sugar in saucepan and bring to the boil
Add the berries and currants and bring back to the boil
Take off the heat and blitz to a puree
Pass through a sieve over a bowl and discard any seeds/pulp
Put the liquid back into the saucepan and back on the heat
Reduce the liquid to a syrup

Cool and enjoy over ice with your favourite fizz!
